A great number of mechanical processes such as harvest, post-harvest processing, packaging, transport and distribution and impacts are effective in the bruising of fruit. Bruises in the fruit cause quality loss in the product. It is necessary to know the factors affecting in bruising and the degrees of effect in order to decrease these losses. Peach fruit, which is widely grown in our country and which is commercially important, is sensitive to different types of damages that may occur during and after harvest. The purpose of this study is to find out the factors that is in the mechanical damage of peach and to develop a model to predict the damage in peach in post-harvest processes. To this end, experiments were conducted on three types of peach - Dixired, Redhaven and Glohaven- which are important for our region. Peaches were tested under laboratory conditions for 3 different periods by taking into consideration the dates determined according to the phenologies of the types. In the testing materials, a pendulum impact tester was used for the impact tests conducted to create different degrees of bruising. Impact tests were conducted between the impact energy range of 15-160 mJ. There is a steel impact cap on the tip of the pendulum placed on the mechanism. On the mechanism, there is a force sensor to gather data and incremental optical encoder to measure the pendulum arm angle. Regression models were formed by making use of `Multiple Linear Regression` analyses to predict damage volume using impact energy, maximum contact force, radius of curvature and Magness-Taylor force which are found as a result of measurements and calculations. As a conclusion, all of the multiple linear regression models formed to predict the fruit of peach were found to be statistically significant (p≤0.01). With the regression models formed, suggestions will be made to prevent the bruising in the fruit during harvest and post-harvest processes and the quality of product will increase. In addition, in the light of the information obtained, data will be formed to improve the systems used in harvest and post-harvest processes or the systems and designs to be installed.
