This study was held to determine appropriate butter ratio of Gün pekmezi and specify the characteristics of the cream. For this aim the pasteurized cream samples, containing different ratios of butter (20/80 (A), 25/75 (B), 30/70 (C), 35/65 (D)) were produced and stored at 4 °C for 90 days. The packed cream samples was subjected to some analyses on the 1., 20., 40., 60. and 90. days of storage period. According to the statistical evaluation; the titratable acidity and the peroxide value of the cream was increased, the luminescence, yellowness and the pH value were decreased; the redness and the HMF amount were rised till the 40. day and after that day the rising was halted on a large scale. The yeast and mold occurrence was not observed at 90 days of storage period. The sensory acceptability and free acidity with peroxide values like oxidation parameters were rised, as the ratio of butter in the composition of Gün pekmez cream increased. As a result it was concluded that the Gün pekmez cream with the maximum 30% of butter content was convenient for the production and the product can be stored at 4 °C temperature for 90 days of period safely.KEY WORDS: Pekmez cream, traditional product, butter, gün molasses, oxidative stability.
